1/4 cup Sugar (can increase to 1/2 cup for sweeter)

Instructions
Mix: In a microwave-safe bowl, whisk together the mochiko, sugar, and water until smooth. The mixture should look like thick yogurt.
Cover & Microwave: Cover the bowl with plastic wrap (leave a small corner open for steam). Microwave on high for 1 minute, stir with a wet spatula, then microwave for another minute.
Check: The dough should be slightly opaque and look stretchy. If it still looks raw, microwave in 30-second bursts.
Cool & Shape: Let the dough cool slightly. Generously dust a cutting board with cornstarch. Turn the dough out and dust the top.
Cut & Fill: Roll the dough thin or divide it into pieces. Flatten and add fillings like ice cream or red bean paste, then pinch edges to seal.
